Title: Truly the Queen!
Review: Having grown up in South/Central Texas - and loving to cook - I've spent many hours preparing Mexican food for my family. I've read lots of cookbooks, but tend to cook 'on the fly' - and while my family appreciates my efforts, there were things that always frustrated me. For one, the amount of oil required for me to prepare a dozen tortillas for enchiladas - the amount always more than I felt necessary (as I want the oil to soften/seal the tortillas - not to be absorbed by them). Following Sylvia Casares' method for 'saucing' the tortillas makes perfect sense, and turns out great tortillas/enchiladas.Sylvia's cookbook explains exactly how her restaurants turn out the best enchildas in Houston - day in and day out. Her recipes are exact, and perfect. I did read the cookbook, but am also actually following her recipes; they are just right. And she covers much more than enchiladas.Sylvia builds flavors - with delicious results. These meals require time and attention to detail, but imo all the best food does - and the results are worth every bit of effort!

Title: Great recipes
Review: I have several cookbooks with mexican and texas recipes, but this one takes my game to another level. The recipes are written for the novice as well as an experienced cook can follow. Even if you haven't made your own enchiladas before, she gives you clear concise instructions on how to create restaurant quality food. If you just take away from the book her salsa recipes you will be the hit of any party.

Review: CLAIMING MY SOUTH TEXAS ROOTS: I was born in Corpus Christi, Texas. I grew up eating food with a certain flavor that represented the heritage and culture of the people from Mexico and native Texans. The food diversified into a distinct style and flavor which is true Tex-Mex. When you taste it you truly know it and never forget it! This cookbook captures the flavors and foods of my childhood which was the author's true intention! I have tried several recipes and each one is beyond satisfyingly delicious. I am so pleased that Sylvia, THE ENCHILADA QUEEN, was dedicated to her roots enough to preserve theses wonderful flavors and dishes. This BEAUTIFUL cookbook is very well written with a logical flow of instructions which allows the Tex-Mex chef wannabe to reproduce recipes with exquisite, satisfying results. Definitely pleased to have purchased this fantastic book! I just love it and the recipes!

Title: These recipes makes me HAPPY!
Review: Having these recipes makes me very happy! I'm from the Dallas area and have lived in California for ten years. One of my first priorities when I visit home is to eat Mexican food - TexMex. But that was only once a year. As many Texans know, that's not nearly enough. With Sylvia's book, I am able to create the basic recipes such as the chili gravies and sauces and salsas and can thereby have the flavors I crave as often as I want!! I've made three recipes and have been happy with them all! I'm sooo happy about this! I'm fairly creative in the kitchen, so when I read how strictly she lays out and follows proportions, at first I thought yeah sure. But I gave it a try and I'm glad I did! The flavors are balanced and spot on! I Highly recommend if your palate has the same cravings as mine and if you appreciate the value of laying a delicious foundation! I rarely get to Houston, but look forward to going to one of her restaurants when I do!

Review: I have bought several copies of this cookbook at book signings; however I needed a gift for a friend and thus ordered thru Amazon. This is the best cookbook I own and I own many. The recipes are easy to follow and once you figure out and make some of basics like the "holy trinity" the rest is easy. I have made several of the recipes and so far my favorites are the Frontera Carne Guisada, Sarita's Rice, Calabacitas y Maiz and of course Chocolate Tres Leches cake. This cookbook is a treasure. It captures the flavors that I remember from my mother's kitchen and that I have not been able to duplicate. Thank you Sylvia for this wonderful cookbook.

Title: Proven Mexican food recipes and cooking tips
Review: The salsa, queso, margarita, and enchiladas Iâve made thus far have turned out great. Made the cheese, beef, and beef fajita ones so far. Who knew soy sauce and water is the secret to beef fajitas! Tastes similar to her popular restaurant in Houston. I ordered the enchilada sampler platter at her restaurant recently and was surprised the crab one was my favorite. I havenât made it yet but that one is in the book. You can tell Sylvia wants everything she does to be perfect. This shows thru in her cookbook. Even the cover and print quality and paper thickness is top
