Title: A Great Cookbook for Vegetarians
Review: The lowly eggplant is far and away the tastiest, yet most overlooked, of vegetables. They grow well in the Midwest, where we live, and they are extremely versatile in vegetarian cuisine. We love them!This cookbook is not strictly vegetarian, but out of the 31 recipes given, I counted only 6 that called for meat, fish or poultry. So that's 25 amazing vegetarian eggplant recipes! And there's no good reason you couldn't just leave the meat out of the remainder and make those veggie friendly, too. TVP (textured vegetable protein) is a great beef or poultry substitute.

Title: so many delicious ways to prepare eggplant!
Review: I was actually searching the internet for the best way to grill a perfect eggplant when I stumbled upon this book. I was really pleased with all the recipes you get! Eggplant is SO good for you, and it really is delicious when prepared in great dishes, or just by itself if you know how to grill it to perfection. It's a great way to sneak important nutrients into your family's meals as well. This recipe book provides easy-to-follow directions on each dish, and the end result is so tasty!

Title: Very good recipes but silly mistakes throughout the instructions.
Review: The recipes sound very good, but the advice and instructions should have been proof read.For example The first recipe is Perfect Grilled Eggplant, where she tells you to apply one side of each eggplant with olive oil, then place them on the grill, flip them and THEN coat the second side with olive oil. I would never apply olive oil to them while they are on a HOT grill!Oil can and does flame up. It would have been much safer to coat both sides before placing it on the grill.The next mistake was the very next recipe, She tells you to trim the stem ends, peel the eggplants and make a few holes in them with a fork. Then grill them, remove from the grill and while still warm peel them again??? How can you peel something twice?Through out the book when she refers to temperatures she adds an extra o just before the F such as 350oF. I have never seen this before, usually it is simply 350F. The way she is doing it makes it sound like 3500F. I know this is a small issue but it's just strange to see it represented like this.This is especially true with the "Easy Eggplant with Sausage Stuffing where she actually stated 4000F instead of 400oF.She also does not state to let the sausage cool before adding the beaten egg, bread crumbs and mozzarella chees, if performed while the sausage is hot the egg would start to become cooked, silly mistakes.

Review: I must admit I obtained a copy of this book out of sheer curiosity and I must say that I have been pleasantly surprised by the content. I particularly liked the informative introduction and background into eggplants and the health benefits of including them into our diet. What I find striking is the fat-removing properties this vegetable possesses. I have also found some mouth-watering recipes in this book such as Healthy Eggplant with Sesame Sauce and the Authentic Chinese Eggplant recipes. Including these delicious recipes into my repertoire of menus has been a time saver while creating refreshing diet variation that my family have fallen in love with. I am looking forward to trying out a few more recipes - indeed I can simply not wait!

Review: Now this is simple. I am a learner cook but I love it exotic. I have not even finished reading the whole booklet. But it has proven to be straightforward. I love trying out new things as I get along in the book. The recipes are great and sometimes, strange especially to a novice like me.
