Title: Well Done...Nice
Review: Meatless: More than 200 of the Very Best Vegetarian Recipes will appeal to a wide audience, including vegetarians, vegans and meat eaters. I am one of them...I do eat meat, but not everyday and in small amounts. This provides some great meatless main courses in addition to sides dishes than can be served with meat if desired.As a former chef and caterer, I have a lot of experience in cooking, but still seek out new recipes. In my opinion, making meatless dishes really good can be challenging and this book has some great looking ones to try. (I have tried a few; see below.)The book is divided as such: Stovetop suppers Soups, stews and chilis Casseroles Substantial salads Sandwiches, burgers and pizza Pasta Simple sidesThe photographs are beautiful and made me hungry...each recipe its own.I tried the fresh pea hummus which was nice and light with great flavor and a nice change from chick pea hummus. The tortilla Espanola was delicious and made a terrific brunch. I also tried the baked artichoke with bread crumbs which was really good. The roasted beets, Edamame and arugula salad was delicious. I had never though of roasted edamame and they were terrific!I will be trying many more recipes.I also like that many different grains are used and a nice variety of vegetables. That said, nothing so esoteric that the ingredients can't be found at your local farmer's market or a good health food store.Now, there are a lot of vegetarian cookbooks out there; why get this one? For starters, each recipe is carefully thought out and most sound really good. I have several vegetarian cookbooks that I look through often and don't always find anything inspiring. Title: Simple and good
Review: This is a fantastic cookbook for beginners. The recipes are straightforward and use ingredients that are usually easy to find. Not a lot of complicated steps and easy to follow. I also bought the America’s Test Kitchen vegetarian cookbook and while it has more recipes this one this is much better for people who live day-to-day and don’t have all day to spend in the kitchen.

Title: Excellent recipes
Review: My husband and I are trying to eat vegetarian Monday-Friday and are constantly looking for new recipes. This cookbook is one of the best yet. The photos are beautiful. The recipes, in perfect Martha fashion, work! Each is carefully labeled with the appropriate nutritional info, as well as vegan, gluten-free, and special diet. For newbies such as us, I am particularly enjoying the helpful information in the back of the book: Versatile Vegetarian - Mashes and Purees, The Vegetarian Pantry, Favorite Flavor Boosters, Basics (cooking terms and techniques), Basic Recipes, Grain Cooking Chart, and Suggested Menus. I am learning so much from this cookbook. We are truly enjoying the recipes. We've yet to find one that we don't enjoy. Tonight we feasted on Southwestern Hash. My meat-and-potatoes husband wolfed down tempeh (a soy product) and avocado. He asked me to make the recipe again next week. That's the highest recommendation possible. If you are wanting a book to teach you about vegetarian eating and cooking and are looking for easy to prepare recipes that are delicious, this is the cookbook for you!

Title: Meatless Delights For Vegetarians AND Non-Vegetarians
Review: I'm not a vegetarian, but I frequently make meatless meals and even have meatless weeks. This book has truly delicious and fairly easy recipes - all clearly written and beautifully illustrated. For my first use of this book, I made three recipes for my (out-of-the-home) vegetarian daughter and she was in ecstasy: huge thumbs up from both of us for 1) Roasted Potatoes with Mushrooms & Melted Taleggio, 2) White Bean & Sage Patties with Roasted Tomatoes, and 3) Broccoli arabe with Chickpeas & Ricotta. She's a busy college student without a lot of cooking experience but I bought her a copy also and she now cooks out of it constantly. We're both big fans. We've only found a couple recipes we were "meh" about - the Tortilla Espanola (very bland), and the Tomato Soup with Poached Eggs (even blander and not enough thickness/texture in soup). It's all a matter of personal taste so the tortilla is fixable for me with the addition of a ton of herbs, and I like the idea of poached eggs in tomato soup but I'll find a totally different soup for next time. Overall though, this is a wonderful book guaranteed to make diners sigh with content. I like the photo and nutrition info with each recipe, but I would really have appreciated a time estimate for each recipe so I wouldn't have to read through the entire recipe and estimate the time myself.

Title: So many fantastic, easy to make recipes
Review: I bought this book along with a few other veggie recipe books. Here is what is great about the book:1) a picture for every recipe.2) nutritional information for each recipe--a handful top 700 cal/serving, so if you're cooking for one or two, it's nice to know ahead of time so you can divide the recipe.3) helpful tricks on how to cook grains in the back of the book.4) hardly any recipe has really weird ingredients you must drive all over town to find. Most of the recipes I made I already had 80% of the ingredients.5) helpful letters at the bottom of each recipe, V -- vegan, G -- gluten free, S -- no dairy, wheat, soy or nuts.Recipes I adored:- Arugula, Potato and Green Bean Salad- Roasted Eggplant Caprese Salad- Eggplant Salad with Isreali Couscous & Basil- Roasted Squash, Apple & Cipolline Onion Salad- Brown Rice, Edamame & Cilantro Salad (this one keeps for a few days so you can make a big batch and bring it to work for lunch, etc.)- Zuchinni "Pasta" with Tomatoes & Walnuts (made this for a gluten-free couple who also likes to eat raw. Surprisinngly good!)

Review: I feel I should start this by saying I love meat. But even more than meat, I love good food. This was recommended to me from a friend who is a vegetarian, and I was very skeptical to pickup this cookbook as such.Well lo and behold, my first week with this book and every meal I made was from inside its pages. I am a very beginner chef and sometimes feel overwhelmed looking at recipes where I don't feel confident I'll be able to pull it off. That was never the case with Meatless. The recipes were mostly easy to make and were all extremely delicious.I highly recommend this for meat eaters and vegetarians alike! Good food is good food, and that's what you will find in these pages.
