Title: A Kitchen Essential
Review: Found this at the local library on a winter vacation, and after experimenting with a few recipes (most noteably, Chicken and Dumplings) realized that this book is absolutely PERFECT. The authors have tested each recipe extensively and found the best way to make not only soup but international favorites like Green Curry, Japanese Noodle Soup, and Cioppino. I couldn't bring myself to return the book to the library without ordering one to keep. Every cook should have this in their kitchen - especially to make those comforting favorites when it is cold outside. One note: most recipes are not quick and easy. But every step is essential to making it taste the very best possible. You won't be disappointed.

Title: Gift for Soup- Loving Hubby
Review: We have been big fans of cooks illustrated for a while because of the tested recipes and detailed instructions.I got this for my husband for Valentines day and he sat and read through all the "sciencey" sections on soup cooking principles.I've made several of the recipes in it before, but this is a good collection. If you don't think you know how to cook (my husband), I promise with any Cooks Illustrated book, you can follow the instructions.

Title: They Tell You WHY
Review: This book is for cooks who are really searching for âthe best of the best,â who want to learn, and who want to improve their cooking skills. (But, even if you donât care about the processâhow they arrived at the methodâand want to just âcut to the chase,â the recipe itself, this cookbook does not disappoint!!). Iâve just read a few recipes, ie, Tomato Soup, Mushroom Soupâ¦. Chicken Paprikashâ¦. These recipes indicate that nothing in this cookbook is going to let me down!!

Title: this is the best soup book out there
Review: This is a fantastic book. Every recipe is excellent! We often do not do all of the steps defined in the book, but use the same spices in the recipes and everything comes out fantastic. We now make large pots of some soups and freeze them for later use. Very good recipes.

Title: Very good
Review: I have bought a ton of cookbooks over the years. This is one of the very few that I actually use, even on a fairly regular basis. None of the recipes I have made out of this book have failed. I haven't yet run across some direction that isn't explained. I am not a good cook, but if I use recipes out of this book they do turn out well and everyone likes them. This is a bigger achievement for this book than you readers know.

Review: I have a HUGE collection of cook books, but this one is a - if not THE - current favorite. What makes this book so fabulous is not just that the recipes work perfectly, but that the reader reaps the benefit of what did and didn't work ( and why)when the authors tried numerous other versions of a particular recipe. Each recipe I tried was a complete winner and was enjoyed by myself ( and I'm VERY critical!) my spouse ( equally fickle) and friends. The recipes are really easy to follow since the authors walk you though every step. In addition, the vast majority of the featured recipes consist of "everyday food" - recipes mercifully devoid of hard to find or hugely expensive ingredients.All in all, the book is very user friendly and a really interesting read it's only "flaw" being that it exclusively cites American measurements (e.g all weights are given in cups rather than oz or grams)and all temperatures are given in Fahrenheit only. However, this is easily overcome by purchasing an inexpensive set of American cooking weights ( available in most cookshops and by mail order) and by using a temperature conversion chart. If you enjoy good ( and foolproof) soups and stews you'll love this book.
