Title: Mug Meals in Minutes
Review: Before I found this cookbook I was eating very little for breakfast and lunch. An Atkins bar and cup of coffee for breakfast and maybe yogurt for lunch. Now that I've found out about mug meals I can make myself a nice lunch in minutes.I'm using a Corningware 20-Ounce Oven Safe Meal Mug with Vented Lid, French White and I find that much better than the 12- to 16-ounce mugs this cookbook calls for. For one, you are less likely to mess up the microwave from spills and things boiling over. It is also less difficult to stir chicken and vegetables together. So I'd go for a larger mug with this recipe book. Especially when making the vanilla pudding which bubbles up a bit.I've tried four recipes so far and loved all of them. The Egg Mug-Muffin Sandwich is really great and takes about two minutes to make. The times on some of the recipes are accurate but I found some of the egg recipes took about thirty seconds more to cook to firm up the eggs. What is neat about using the 20-ounce Corningware mug is that the egg round that comes out of the mug is the exact size as an English muffin. So the two work well together. I also tried the eggs with pesto and found them quite delicious.For a lunch I made the Chicken and Vegetable Stew which turned out more like a chunky vegetable soup. With a mug, once you eat the stew you can drink the rest of the liquid out of the mug. I used some chicken breast I'd saved and frozen instead of the canned chicken which I was convinced I wouldn't like as much. I used salt-free chopped tomatoes and just added my own Italian seasoning, seasoning salt and pepper. Some of the recipes just call for seasonings to taste. I wasn't sure I'd like using canned vegetables but they were not bad at all.This cookbook is rather multicultural with recipes to love from many countries. There are recipes like Thai-Style Beef and Peppers and Gnocchi with Mushrooms and Sage. Really everything in this cookbook looks delicious.Some of the things I found helpful remembering when cooking from this cookbook include having a small whisk handy and keeping a small plate on the counter to keep things sanitary when stirring things in the mug and then cooking in the microwave again and stirring again. You can see how your counters would get messy without a little plate.A lot of the recipes call for prepared foods like frozen meatballs or instant potato flakes, canned beans and bacon bits. I decided to just save some cooked ground beef all crumbled and frozen. Then I can use however much I need at a time.The vanilla pudding was interesting and quite delicious but it definitely gave me a sugar rush. I'm going to figure out a way of making it with stevia instead. It did thicken up nicely and was delicious warm.Some of the recipes I'm looking forward to making include the Zucchini Bread and the Bean and Bacon Soup.I think if you find one recipe in a cookbook it was worth getting it. I've found two egg recipes I'll use all the time. I think I'll be healthier for having this cookbook. The thing is this cookbook is a real time saver. Here is some information on the other recipes I've tried:Baked Banana Oatmeal - This is a very hearty meal which is probably better in the winter. It was quite delicious with mashed banana and I added some brown sugar on top.Zucchini Bread - This recipe needs more spices to be flavorful. I decided to make the gingerbread recipe and add the zucchini. That turns out much better.Banana Bread - This is a very easy recipe to make to have banana bread in less than five minutes.Thai-Style Beef and Peppers Mug - I thought this tasted great and the peanut butter and Thai curry paste sauce was a hit. I did double the vegetables however. There is a lot of sauce for the amount of vegetables called for. So just double them. I also used some top sirloin that I fried in a frying pan instead of the meatballs and that turned out to be good.Zucchini Lasagna - The idea of this recipe is a good one but the ricotta cheese melts so completely that it turns out a bit more like cheese zucchini soup. I'm going to try making it with half the ricotta cheese and maybe add some egg to the cheese to make it denser. I also fried the zucchini instead of microwaving it to give it more flavor. I also added some garlic salt to the ricotta.Macaroni and Cheese - I was amazed at how quickly the elbow noodles cooked. The cup did overflow a bit so use a paper napkin underneath. I added a little more cheddar cheese than it called for. I think it would be better with cream.Salmon Cake - I used a can of pink salmon and it turned out great. I used crushed garlic croutons which gave it a good flavor. The recipe can even be made without a chopping board if you just use a scissors to cut up the roasted bell pepper and green onions.Peanut Butter Cookie - In a 20-ounce mug the cookie looks real and tastes delicious with some tea or milk. I was amazed you could bake a cookie that good in the microwave. Title: Lots of recipes
Review: As there are a lot of recipes, there are not so many pictures. There are some pictures, but not as many as I would have liked. I am a very visual person, but this is a gift for my sister, so I hope she would not mind the lack of pictures. Other than that, the recipes sound delicious and I am sure she will have fun making them.The book came to me in great shape, no tears, rips or anything out of place. So that makes me happy with that.

Review: GREAT recipe book for singles, college students, newly widowed, etc.!! Personally, I bought this book because I'm 70 yrs old and I really hate to cook. My tastes have changed dramatically, and I no longer enjoy the meals I cooked when my kids were growing up. Hubby still likes the recipes we USED to eat, but he doesn't mind making his own dinner (which he does 98% of the time.) I generally avoid frozen meals because I don't like the taste, and many have too much salt. Therefore, I was looking for ideas for a meal I could quickly prepare for myself - with maybe a salad on the side. This book was & is what I needed. The meals are nutritious and use everyday pantry items. No need to run to the store and look for an ingredient that you never heard of.If you are lucky enough to find this book at your local library, I encourage you to check it out. I predict that, after making a few of the dishes, you will come back to Amazon and buy the book.One note of caution: I felt that the price of the book was too high for me, so I bought it used. The seller I bought it from must have had it stored with items that were heavily perfumed. When I opened the book, I was hit with a perfumed smell that was unpleasant to me. I've had the book for 2 months now, and the unpleasant smell is dissipating, which I'm obviously happy about.
