Chestnut Rum Chess Pie
Inspired by Phila Hach’s Chess Pie origin theory, in which she said that the name “chess” comes from older recipes that used chestnut flour, I decided to play around with the idea of a chess filling flavored with chestnuts. With the warming flavors of the rum and spices, this pie is great during the autumn and winter—which is also when fresh chestnuts are available!
Lemon Meringue Pie

Title: I love Petee's Pies in New York.
Review: My daughter used to go to college in Manhattan and used to take me to Petee's Pie shop every time I visited her. They have the best pies! Every pie I ate was delicious! My favorites were Apple pie, blueberry pie and Almond black bottom Chess pie. I am so glad all those recipes are in the book. I already made the apple pie and it was easy to put together and delicious. I will try the Almond Chess pie next. I didn't use the crust recipe from this book and used Bouchon's Pate Brisee all butter recipe instead. I couldn't get it to stop the cracking using Petee's recipe. Pie crust is my kryptonite!! Purchase this book if you like pies! Good instructions and not complicated.

Title: Great Cookbook
Review: Great cookbook. My cousin had one and after seeing hers, I had to buy one. So far I've made 3 of the pies and they have all been great. If you like to bake or know someone that does, this is a great addition to your cookbook library or a perfect gift. Really nice pictures and stories through the book, which I appreciate.

Review: Love this book! I love the PETEES, I go to the LES location every time Iâm in NY! I was looking forward to going again in 2020 but Corona happened and couldnât. Review: Beautiful book with clear instructions. HOWEVER, the ingredient list and instructions for Chestnut Rum Chess Pie appear to have left out the rum.Is this an editing error, or dies chestnut rum pie just not contain rum?!

Review: book is good for american style dessert pie's. I was looking more for the combined english pie's but I guess for that I have to get seperate another book. (selected one for savory already). Overall the book still was a good buy since we all like desserts & sweets

Review: A great book for everyone who wants to make some pie! Recipes range from classic (blueberry, apple, for example) to other more innovative pies. I have made the lemon chess pie and it was delicious! I have never had a chess pie, as they aren't very common in Canada. Other, less common recipes include poppy-seed meringue, poppy seed crust, pony pie (which looks awesome, judging from the photo), and some interesting berry and nut pies. With extensive sections on how to prepare and handle crust, this book is suitable for everyone from beginners to adventurous and experienced home cooks. This book has something for everyone. A must for people who regularly bake, or want to learn how to successfully bake pies.
