Title: Delicious, simple recipes
Review: There are a couple of pasta dishes in this book that have become regulars for me and my family. They are simple and delicious! That said:1. These particular dishes (the pasta with cream and zucchini and the pasta with olives and chick peas) require 12 ounces of pasta. Most of the time, I'm stuck buying a pound and then measuring it out to get three-quarters of the box. That's slighly annoying!2. And not all the dishes are complete meals in themselves, if that's what you're looking for in a casserole/eintopf.That said, I've enjoyed using this book and eating the food I cook from it. If you're looking for a simple vegetarian cookbook, or a way to add a vegetarian meal or two to your weekly rotation, this is a good book to try.

Title: my new favorite cookbook for when I don't have time or energy
Review: I got this in the mail yesterday, and 30 minutes after opening the package I had dinner ready - a delicious and balanced dinner that my husband and two kids (aged 1.5 and 5 years) ate with relish!! I love this book already. I did buy it because my friend had it and I had tried a few bites of dishes she made and she was very happy with the recipes. The recipes are truly easy, everything went in one pot at one time then cooked for 15 minutes and turned out beautifully. I am not even vegetarian and yet I know I will be using this book regularly because I love delicious and healthy food that is quick and easy to make, this has it all.

Title: Great Ideas for Vegetarian Meals
Review: The recipes in One Pot Vegetarian are easy to follow. The dishes are flavorful, although I usually increase the amount of spices called for in a recipe to make spicier meals. For example, for a curry dish I will usually add at least 1 more teaspoon of curry than the recipe calls for and I add cayenne. Some recipes sort of cheat on using only "one pot" by requiring cooked grains. Obviously cooked grains means using a pot to cook the grains ahead of time.

Title: Quick delicious recipes
Review: Beautiful photos of everything that goes into the recipe on the left page and the finished product on the facing page. Simple, easy directions, no more than one paragraph. We liked almost every recipe we tried, and no, we are not vegetarian. Often I added cooked chicken or ham to the finished product with great results. I took this out of the library right before the pandemic quarantine and had lots of time to make many things in this book. I was so impressed I bought the book.

Title: Easy to follow and taste great
Review: I am a horrible cook. Just absolutely dreadful. But, these recipes are really easy to follow and taste delicious. I highly recommend this cookbook. The pictures make it so much easier! I know what my dish should look like before, during, and after! As someone who has really struggled in the past, that was a life saver!

Title: Decent recipes but lots of high fat dairy
Review: The book is beautifully illustrated and the recipes are somewhat interesting, nothing particularly new but itâs a one pot take on things. My problem is that most of the recipes use cream, ricotta, or some kind of high fat dairy. Iâm trying to be healthier and adding heavy cream to all my vegetarian recipes isnât what I was looking for!
