Artichoke 'Risotto'

I love artichokes, but they’re carbier than some other vegetables. By combining them with the lower-carb cauliflower, we can enjoy them. Pair this with a rotisserie chicken from the grocery store and the family will ask if company is coming.
First, start the onion sautéing in the olive oil, in a big, heavy saucepan over medium-low heat.
Trim the leaves and the very bottom of the stem off your cauliflower and run it through the shredding blade of your food processor. Go stir your onions. Now, dump the resulting Cauli-Rice into a microwavable casserole dish with a lid (or you can place a microwavable plate on top.) Add a couple of tablespoons (28ml) of water, cover, and nuke it for 6 minutes on high.
Okay, back to your sautéing onions. By now they should be turning translucent.
Add the white wine, the bouillon concentrate, and the garlic and turn the heat up to high. You want to bring it to a boil and then turn the burner down just enough to keep the mixture boiling without boiling over.
Somewhere in here, your microwave will beep. Remove your Cauli-Rice and uncover it to stop the cooking.
When your wine has cooked down to about one-fourth of its original volume, add the cauli-rice, artichoke hearts, Parmesan, and cream. Stir it all up, season with salt and pepper to taste, and serve.

Title: Excellent. Quick useable recipe index.
Review: The recipe seem to be extremely good. The index is easy to access. If you want to find a meatloaf recipe you look under M for meatloaf. Not G for grandma's meatloaf, or something dumb like that. Nothing irritates me more than an index that can't be used quickly. If I want to bake something I want to do it the same day, and not spend an entire day flipping through all the recipes trying to find what I'm looking for. it also has a very clear nutritional count listed for all the recipes in the book. I need the carb count and it is clearly registered. I am very happy with this book and feel like I wasted money on the other books that I ordered prior to this. But at least now, I have a book that I can use. I hope this helps some of you like me, who don't want to spend all day thumbing through cookbooks, when your ground beef is ready to use.

Title: Great book for LC/keto beginners and veterans alike!
Review: I've been low carb for many years. Dana Carpender was the first low carb author I ever started following. I have all of her books. This one doesn't disappoint. She does a pretty good job in the beginning of the book explaining the keto diet so this is a stand alone book if you're new to the diet. If you are not, it's pretty easy to skip and go right to the recipes.I don't know how she continues to come up with new and delicious recipes! I've brought several of her salads to work this week and they were all fantastic and kept me going until I got home for dinner. This book has appetizers, snacks, main dishes, side dishes, desserts - basically anything you need. Her books do not have pictures; that's fine by me. It would make the book way too heavy. With so many recipes will find something your family will love. My husband and son actually love her recipes more than other keto recipe books.One side note - I'm gf (severe allergy), worcestershire sauce has gluten in it so you need to keep that in mind when making the recipes if you are trying to stay gf. (I sub coconut aminos; probably not similar enough but it works for me.)

Review: This cookbook has a beautiful, inviting cover, which got me all excited to thumb through the pages and look at all the recipes and accompanying pictures...except there were no pictures.There were a lot of recipes but too many personal stories for my taste. Iâd rather just have the recipes and pictures of what the dishes are supposed to look like so I can gauge if Iâm close or not to the finished product.There are some pretty good dishes, though, which is why Iâm rating this book four stars.

Review: Dana Carpender is a name I trust. Iâve had her low-carb cookbooks for years, and I love them. I use them almost as much as my motherâs beloved Betty Crocker cookbook.My doctor has recently been encouraging me to make the not-far jump from low-carb to keto. But it seems so overwhelming! And my husband and children need more variety than I do. I was so excited to see her come out with a keto cookbook that was so detailed and sensible. With chapters devoted specifically to snacks and munchies, baked goods, eggs, side salads, hot sides, poultry, fish/seafood, beef, port/lamp, main dish salads, soups, condiments, beverages, and desserts, this book is truly a compendium of keto wisdom! I canât wait to work my way through the whole book, much like Iâve done with her low-carb books.I highly recommend this book to anyone wanting a sensible, do-able keto recipe book with simple ingredients and clear directions.I gratefully received this book as an eARC from the author, publisher, and NetGalley in exchange for my unbiased review. Title: I doubt I'll use this much at all
Review: I'm a fan of Dana's, I have several of her older low-carb books. I don't like to spend time cooking, nor shop for a bunch of ingredients. These recipes have way too many ingredients. I was looking for recipes more basic than these. Most recipes have at least 10 ingredients minimum. I'll probably end up donating this book and stick to her older cookbooks.

Review: I absolutely love the book. I have been eating and cooking low carb since 2004 and thought I had seen every version of every recipe on earth. I was thrilled when I opened the book to see fresh new ideas and innovation on classic dishes. The first few chapters are educational and just an all around good read. This is a must have for those living a sugar and grain free lifestyle. There are easy every day dishes and ones that are more high end (duck, lamb, lobster - oh my!) And I'm a sucker for a good sauce or condiment to elevate a meal. My favorite part is the clear voice of the author throughout. It makes keto cooking feel approachable and friendly.Also the book has a glossy cover, nice paper quality and a good heft to it. Makes a perfect gift, get one for you and a friend.

Title: Great recipes, truly keto, and a fun read.
Review: This is a great cookbook within many variations and it's peppered with humor in the recipes and recipe titles. Even if I'm not looking for a specific recipe, I enjoy reading the commentary. It's the only cookbook that seems to be truly keto compliant. I am very pleased also with the nutrition break down of each recipe. Lots of great information about ingredients in the first section. I also like that there are just a few ingredients in each recipe that you likely already have or can easily find. The instructions are also very easy to understand.

Review: Dana Carpender has been my low carb goddess since I read her very first book many many years ago. She then turned to writing cookbooks and I have loved every one of them. This one is probably her best, and it is all you need to get started on the ketogenic journey, or to expand your repertoire of delicious low carbohydrate food. Her recipes are delicious and easy to follow, her writing style is engaging, and the food is delicious.If you are looking for keto/low carb/paleo cooking ideas, this book should be on your shelf.
