TIPS

• Choose apples that have a good flavor once heated, such as Granny Smith, McIntosh, Crispin, Cortland or Northern Spy. Apple varieties that are more suited to fresh eatng, such as Royal Gala, don’t have much flavor once dried.

• Apple skin does toughen slightly when dried. If you’re planning to rehydrate and cook the apples, you may wish to peel them before drying. If you’re eating them as snacks, leave the skin on for extra fiber.

DRIED APPLES

Preparation:

Peel apples, if desired, and remove core. Cut crosswise into rings about 1⁄4 inch (0.5 cm) thick.

Pretreatment (optional): To prevent browning, dip apple rings in lemon juice or an ascorbic acid solution (see page 13) as you slice them. Drain well.

Drying: Place on mesh drying trays. Dry at 130°F (55°C).

Time: 5 to 6 hours.

Doneness test: Rings should feel dry and leathery and be spongy and still flexible.

Review: I love the book. It's very informative and in depth. The only Cins...most of the fruits run same temp and time. And things shoukd be discussed on what not to do or if u run into a issues what to do. I've watched alit of u tube videos that get way into how to make sure is dry... what works what doesn't. Title: The cookbook I've been looking for!
Review: I've been looking for a cookbook that is specifically adapted for home dehydrated ingreedients for a long time. This is the One. Dehydrating home grown and store purchased meat, veg, and dairy was not new to me. Nor how to use my dehydrator properly. What I truely needed was a detailed cookbook that then focused me now How To Include all the foods that I had processed into clear recipes and tasty home cooked meals.This book should have been more accurately titled 'The Dehydrator Cookbook Bible' . The first 75 pages are dedicated to the basics of food dehydration but it is the remaining portion of the book that really shines for me. Many recipes use a combinatin of fresh and dried ingredients and offer tips for alternative ingredients when there is something you may not have prepped in your pantry. There is also a very large section dedicated to camping/hiking recipes with the majority of them as 'just add water' type of cooking.Overall I would call this an excellent cookbook to add to the shelves of any persons interesnted in Prepping/Sustainability, accross the spectrum to those just interested in how to streach your food buget with home dried ingredients.

Review: THE DEHYDRATOR BIBLE is exactly what I hoped it would be when I ordered it: An excellent dehydrating reference and recipe book that supplements the brief "getting started" guide that came in the box with my Nesco FD-75PR 700-Watt Food Dehydrator.The book begins with a clear, easy-to-understand chapter that explains how drying works, how to tell when food is dry enough, how to store dried food properly, and when to rehydrate food. It also includes general troubleshooting tips.Next, the book has useful charts that tell you how to handle dehydration for specific herbs (e.g., cilantro, mint, parsley), fruits (e.g., cherries, citrus fruits, peaches, pineapple), and vegetables (e.g., asparagus, radishes, sweet potatoes, tomatoes). For each type of produce, the authors discuss preparation (peel, cut into quarters, etc.), drying (how to arrange on trays, what temperature to use), time (hours required for drying), doneness test (e.g., plums should feel dry and leathery), and tips (e.g., blue or Italian plums give the nicest texture). The book has similar charts for beans, tofu, grains, and dairy products. It also includes a chapter on methods for dehydrating meat, poultry, and fish.The bulk of the book has recipes for cooking "at home" and "on the trail" with dehydrated foods. Title: Loving this book so far!
Review: I bought this book shortly after purchasing my 6-tray Excalibur dehydrator and it's been very helpful in learning the best ways to dehydrate various foods. I've used the recipes in here for apples, pineapples, strawberries, and beef jerky so far. As soon as I receive the dehydrator trays I ordered I'm planning to make some of the fruit leather recipes. I can't wait!

Review: I haven’t used any of the recipes yet, and though much of this might be found on the internet, if the internet fails for whatever reason, it would be nice to have a hard copy to refer to. I live in a hurricane zone. I dehydrate veggies that are left over…just in case. But, what do I do with them? I usually powder them and add them to soups. But in a pinch when there isn’t any power, I need a plan B.

I had no idea where to start or what needed to be blanched, cooking times, etc. What an amazing book with so many real recipes and dehydrating tips, trick, etc. Perfect for me with severe corn allergy. Tells you cooking times and if you need to blanch, etc. I bought this because of the recipes pictures. I also have the juicing bible my mother in law gave me many years ago. It’s opened up so many more options gor me and this is an excellent book to get started! It was suggested to in my allergy group and my dehydrating group.
