Garlic-Herb Butter Gnocchi

Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.

Process the florets in a food processor until completely chopped into meal. Transfer the meal to a clean, thin dish towel or piece of cheesecloth and, working over the sink, squeeze out all the excess liquid.

Place the squeezed meal back in the food processor along with the Parmesan, tapioca flour, egg, and egg yolk. Process until the mixture is well combined and looks like a mash.

Transfer the mixture to a plastic bag and cut off one corner to create a ½-inch (1 cm) opening. On the prepared baking sheet, pipe the gnocchi into pieces about 1 inch (3 cm) long and ½ inch (1 cm) to ¾ inch (2 cm) wide. The gnocchi won’t spread too much while they cook, so you can line them up closely, about an inch (3 cm) apart.

Once all the gnocchi are piped, use your fingers to shape them gently into ovals. Then gently press the tops with a fork to get that traditional “lined” look. Bake for 30 minutes.

For the Garlic-Herb Butter Sauce

4 tablespoons (½ stick/57 g) unsalted butter2 garlic cloves, minced1 tablespoon chopped fresh sage leaves1 tablespoon chopped fresh chives¼ cup (30 g) shredded Parmesan, plus more for garnish

When the gnocchi are done, make the sauce: Heat the butter over medium-high heat in a pan large enough to hold the gnocchi. Add the garlic, sage, and chives. Cook for 2 minutes, until fragrant.

Add the baked gnocchi to the pan and toss a couple times until they are coated with the butter sauce. Add the ¼ cup Parmesan and cook for 1 minute more, allowing the cheese to melt and become integrated into the gnocchi.

Title: officially my F A V O R I T E cookbook
Review: I have been following Lindsey's blog for a while now and every single recipe of hers that I've made has been incredibly delicious, so I knew that when her cookbook came out I HAAAAAAD to buy it! I've already made 3 recipes since getting it 2 days ago...Needless to say, those 3 recipes have been a home-run hit with everyone my family (toddler included)!Like her husband, I too have type 1 diabetes and look for low glycemic foods because it makes controlling my sugar a lot easier. Cauliflower has been a staple in my house for years for this exact reason.Type 1 Diabetes aside, this cookbook should be a staple in everyone's kitchen because the recipes are D E L I C I O U S , super clean, and are incredibly easy to make (no need to run to the store for weird ingredients or to order a random kitchen gadget), everything you need to make these recipes is most likely already in your pantry.And as a graphic designer, I can't write this review without talking about the look & feel of the book itself. The design and photography are MINT and carry a great unity throughout the book. And bravo on the paper stock and embossed cover. You can F E E L the quality of this book when you turn the pages and hold it in your hand. Bravo Lindsey, you should be very proud of this book! If I could give 10 stars I would!

Title: All the recipes don’t taste like cauliflower 🙂
Review: I love the creativity in this cookbook and how the author has opened my eyes to how versatile cauliflower can be in recipes. I would never thought that brownies and coffee cake could taste delicious with cauliflower as an ingredient! There’s so much more in this book that you need to buy to discover for yourself. All of the recipes are gluten free, a lot are vegan. I love the falafel made without chickpeas for a change and the gnocchi are especially great especially for people who don’t live near a Trader Joe’s and have cauliflower gnocchi envy. Personally I think Lindsay’s recipe is better and they’re easy to make and fun to make with others. This is a fun cookbook to have that provides a lot of delicious recipes for this high Vitamin C containing vegetable that tends to get a bad rap or relegated to subbing for rice and has so much more to offer.

Title: Shaking up my kitchen with delicious and healthy new recipes
Review: This book has been a really fun addition to my cookbook collection. It has been nudging me to try new things and I have found some real gems along the way! The cauliflower crust pizza is very good and the quinoa frittatas are my fave so far. I’ve been enjoying working my way through some of the recipes with the author in her instagram cookbook club. I hav even reached out to her with questions multiple times and she always gets right back to me. It’s fun because I feel like I’m not alone in this and not intimidated at all. Some of the recipes have a lot of steps, but those steps are worth it for a healthier adaptation of things I already love. Ever since I bought this cookbook, I always keep some cauliflower on hand because I know I can always use some to whip up a tasty and unique recipe from this book.

Title: My fellow celiacs...Buy. This. Book.
Review: What a fantastically creative collection of healthy, delicious recipes! If you follow a gluten free diet like me (due to celiac), it’s refreshing to have recipes to choose from that are safe, easy to follow and YUM! The pictures are beautiful (because yes...I want to see what I am cooking and know if I nailed it) and the notes on substitutions and cooking tips are helpful. Also, as a mama of twin toddlers, anytime I can hide some veggies in a dish my kids will actually eat is a major win!

Review: Not only is the book adorable, it is packed with so many fun gluten free recipes! And it is a great way to add some more veggies into your diet — even in desserts and baked good. Review: YOU NEED THIS COOK BOOK!!!Absolutely the best cook book I’ve ever purchased!!! Everything I make (and I make a lot of stuff out of curiosity) has been nothing less than amazing! My husband loves everything I’ve made so far. My fav (to date) is the kale Cesar salad. So simple but so delish! My husband is obsessed with the sweet and sour cauliflower and my go workers loved the chocolate peanut butter cup cakes. I can’t even explain how this book has been a game changer. Review: Cauliflower is so healthy. Why not add these creative recipes to your weekly meal rotation? I just received the book a week ago and have read through the book and tried the quiche recipe. I am a totally inexperienced cook and this recipe turned out great. The 2 of us loved it and it was eaten up in 2 days. I also appreciate the beautiful photos, easy steps and writing style.

My daughter has PCOS so is always cutting carbs and sugars and is in major love with this cookbook. (I just had to buy one for each of our houses ;)).
