“Charity is taking a practical approach to a plant-based diet. . . . She provides support and encouragement as she guides you through this exploration.”—Venus Williams, from the foreword
Whether you’re new to plant-based eating or already a convert, when you cook vegan with Charity Morgan, private chef to elite athletes and rock stars, you may be leaving out the meat, dairy, and eggs, but you won’t be missing out on the flavor and indulgence of all your favorite comfort foods.
In her first cookbook, Charity lays out a plan for anyone who wants to eat less meat—whether they are looking to go completely vegan or just be a little bit more meat-free. Pulling inspiration from her Puerto Rican and Creole heritage as well as from the American South, where she lives with her family, Charity’s recipes are full of flavor. Think Smoky Jambalaya; hearty Jerk-Spiced Lentils with Coconut Rice & Mango Salsa; Jalapeño-Bae’con Corn Cakes with Chili-Lime Maple Syrup; and a molten, decadent Salted Caramel Apple Crisp.
Unbelievably Vegan offers more than 100 recipes for living a meat-free life without giving up your favorite comfort foods. Charity guides readers on how to use oyster mushrooms to stand in for chicken and how to spice walnuts to taste like chorizo! She proves that vegan food can be fun, filling, healthy, and above all else unbelievably delicious.

Title: Chef Charity's plant-based food is JUST SO MUCH BETTER than everyone else's!
Review: Several years ago I tried some of Chef Charity's foods from her website and I was blown away. I mean, her food is JUST LITERALLY SO MUCH BETTER than everyone else's plant-based recipes. There are so many out there that are just flavorless and dull, I mean, they're "just ok", but they're missing that pop and twang. Her food is completely different. It has so much deep rich flavor and spice that I emailed Chef Charity out of the blue and asked her when she was going to release a cookbook! She told me it was in the works and to stay tuned! When I saw it come out on her mailing list I was like, PRE-ORDER, BABY! I have been beyond pleased with this cookbook. It is huge and thick and has a ton of ideas, many of which are Creole and Latin-influenced. We have made a recipe a week out of it for awhile and we have loved it. The bae-con was one of our faves! I love how veggies are worked into everything, like even 'plain' things like grits have sweet potatoes in them! The pictures are gorgeous, entertaining, and mouth-watering, and the recipes are complex but they do not disappoint. Once you get your kitchen together with all of her homemade spice mixes and pre-make some things, you will have what you need to make a bunch of the stuff. As with all delicious food, ya can't rush it and you will be pleased with the outcome. If you're looking for a quick short ingredient cookbook, this isn't for you. But if you are looking for FLAVOR FLAVOR FLAVOR in a plant-based menu, you have come to the right place. For the next iteration, I'd love to see more substitution suggestions if one can't find some of the more hard-to-find ingredients like fresh shiitake mushrooms and maybe some gluten free substitution ideas in some of the recipes, since we deal with a celiac challenge in our family. She has done an amazing job overall though, so please don't take that as a criticism! Thanks Charity for this winner of a book!

Title: Great cookbook, but be careful
Review: Received the book a few days ago, have already tried a couple of them, and you're right, Charity. They are amazing. So versatile, wanted to try everything. However, as I said, be careful. By that I mean there are a lot of items most of us don't have in our pantry, and if you're on S.S. as I am, they will cost a dent in your food budget, as it is mine. But Charity hit it right on the button, slow and easy, buy an item or two (or as many as you can afford) at a time. Do not let it be a deterrent, just work with what you have. Charity has given us a superb cookbook, try her recipes, you'll be hooked, I guarantee. Thanks, Charity.

Title: Full tummy is a happy tummy 😀
Review: Well first off I love love that these recipe portions are great for my family .Alot of recipes elsewhere. I find my self having to double or triple just to be enough for my family of 2 adults and 2-3 toddlers .With this book it's just perfect. Sometimes we even have some left over for my husband to take to work, as well as a few coworkers to sample some . So far what we have tried has been great and definitely does not lack flavor. One thing to keep in mind though is when I first got the book and wanted to try something right away. There was usually something that needed to be prepped before hand, having to wait for nuts to soak for example. If your wanting something right away just be aware to check the recipe. Look over the directions first to know for sure before you start whipping everything up.Also just a suggestion it's kinda hard to flip back and fourth from pages when hands are wet or soiled from handling different foods. And a marinade or cashew cream is also needed. Maybe they could add in the same page of the recipes like a smaller book mark like page. Kinda like what they do for specials in restaurant menus. With the sugested marinade recipe or cashew cream whatever extra Its calling for in addition to it being off on its own page. For now to avoid that , I'll probably just scan it on my printer put it in a plastic cover & stick it in the recipe Paige I'll be needing it for. Some of the ingredients I feel sometimes can be difficult to find like vanilla Bean Powder or turbinado sugar. I had no clue what it was or why it was so expensive.I just used organic cane sugar and brown sugar instead .I follow Charity Morgans fb page and saw something about a Amazon Pantry and thought that would be a great idea &would be helpful . The link I tried to use didn't work but I'm pateintly hoping that it does get updated.Back to the book though, I loved reading the stories of where the recipes came from and why they were special to the Author. I thought it was a sweet touch instead of just listing off recipes and ingredients. Pictures are also important to me. This book did a great job of making me salivate looking at the pictures of the food .It made me excited to want to try out certain recipes because the photos were taken very well . I'm very happy with this purchase . I show it to every one I know ,and tell them they should buy one . lol

Review: This book has amazing vegan recipes--which she shared not only with her husband pro-football player, but with his teammates. Excellent reviews by people who have eaten them. I can't wait to try them myself.

Title: Over complicated
Review: As a vegan who loves to cook, I was excited about this book and the recipes. However they just seemed way too complicated and also required me to hunt all over town for a lot of the ingredients. Which is unfortunate, because no one has time for that.

Review: I knew as soon as I saw this lady on Game changers and everything she was making that I had to have this book. I purchased the Kindle version and it does not disappoint! The kindle version is really easy to navigate and presents very well. And of course the recipes are amazing! They are so creative and simple ingredients. As well, there are so many homemade versions of ingredients for her recipes so you can make it all from scratch. As well as lots of tips and more uses for the recipe. I just love it! I kind of wish I did get the hardcover as I do love pouring over a good cookbook - maybe down the road I still will.

Review: Had this book less than a week but have done several recipes already. The banana chocolate chip bread went down a treat in both my and my parents house! Did the tofu hollandaise muffins yesterday for breakfast, really yummy. My favourite has got to be the lobzster vodka pasta, bursting with flavour! Being in the UK I've been having to convert the ingredients from cup measures, etc. The soy curls are soy Chunks which I found on amazon. Confectionery sugar is icing sugar. I just used a mixed box of mushrooms in the pasta dish as in the UK we don't have lobster mushrooms, well I certainly couldn't find them if they are but it was devine! The book is rather like a bible for many things as it shows you how to do various sauces and stocks etc, too. I'm looking forward to trying more!
