Title: Works well (very well) and it's easy to clean
Review: I was torn between this stick model and the wide model. This was the best choice, because it's very flexible on both small and large meats, and you can get into tight spots on boned pork, beef, and chicken. It's surprisingly easy to clean, and the pull-back spring-loaded head makes it safe, because this thing is VERY sharp.It appears to be well-built, and I can't see it wearing out any time soon. Furthermore, it's also very comfortable to hold, which I think is another benefit of the stick vs wide model. It makes short work of any kind of meat, especially thin pieces, and it tenderizes them perfectly without destroying the shape or overall structure. Seasoning and marinade deeply penetrate the meat, which really boosts the flavor.Overall, I really like it, and it gets the job done. It makes inexpensive meat cuts super tender, and makes better quality meat even better.

Title: Good for skinless meats
Review: It's fine for chops, beef roasts and steak. Had a hard time piercing the skin on my pork roast that I intended to marinate. Had to go back to using a sharp knife to make multiple cuts. I bought it specifically for the pork skin after reading a review that it worked for that person. Might be OK on blanched pork skins, though. Will try it next time I make pork belly.
