Sample recipe: Easy Blueberry Banana Muffins

1. Preheat oven to 350°F. Prepare a twelve-cup muffin tin with baking cup liners or gluten-free nonstick cooking spray.

2. In a medium bowl, combine bananas and baking soda. Allow the mixture to sit for at least 2 minutes. (Allowing the mashed bananas and baking soda to sit for at least 2 minutes before adding the rest of the ingredients is key to what makes these so light and fluffy.)

3. Stir buttery spread into the mashed bananas, then stir in sugar, salt, eggs, and vanilla extract.

4. Mix in flour, cinnamon, and lemon peel. Gently stir in blueberries.

5. Scoop batter into muffin tin. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Place muffin tin on a cooling rack and cool for 2 minutes. Remove muffins from tin and place on rack to finish cooling. Store in an airtight container at room temperature for up to 3 days.

Review: This cookbook is a God send. The meals are quick and easy to cook. The taste is so delicious and the best part is, It's only been a week of delicious meals and I have lost 6 pounds already. Title: New to Gluten-free and this is the book I needed
Review: I’ve had a chronic cough for a long time. Decided it is likely due to a gluten allergy. Started to give gluten-free a try. Found this cookbook and found it to be filled with a ton of satisfying recipes.Still thumbing through and finding plenty I want to try.

Title: Best blueberry muffins and bread I have tasted in years!
Review: I am both glutton intolerant and lactose intolerant. While I can work around lactose intolerance, as I have had that for nearly 20 years, I am still struggling with gluten intolerance. This book has made it so much easier. The recipes are fun with plenty of information on what is needed for the recipes. I have already made blueberry muffins and they were soooooo good. It will definitely travel with us. I have been struggling with bread recipes. I think I have finally got it. Page 184 has a Bread Machine Bread recipe. I have tried this several times only to have it go liquidy during cooking then overflow slightly then shrink to maybe 1 lb loaf in the cooking bowl. Today I baked a nice 3 pound loaf. You will need to make these changes: Use 1 cup of unsweetened almond milk not 1 1/2 cup not warmed 1/8 cup dairy free buttery spread melted not 1/4 cup 1/4 cup honeyThe rest of the recipe can be found in this book. The bread is nice looking and tastes good. All of that and it is gluten and dairy free. WOW!!! We just sliced the bread and it feels like velvet. My husband said it is beautiful bread.. This is our go to recipe for our bread machine bread..

Title: Variation of recipes
Review: I finally made taco meat with 80/20 instead of 90/10 beef. It's easier to pickup in 3 pound packs. I refrigerated it after cooking and cooling. I reheated it in a pot and added water and it tastes good for something without all that sugars and carbs. Reminds me of using Rao's versus Ragu sauce when you are trying to eat healthier versions of your favorite meals
