Title: Gotta get the hang of it
Review: I bought two and they were fiddley at first. I used them for truffles. The first batch, my chocolate coating was too thin and they cracked coming out. Next I overcompensated and made them too thick. After three or four tries I got used to it.My technique is to melt chocolate in a double boiler. I have two of these molds so I fill one completely with melted chocolate. Then I put the empty mold on top and flip the two trays upside down together. The chocolate drips out and fills the second tray. I set the first tray aside then flip the second tray upside down over a silicone mat to let the excess drip out. I set the second tray aside and spread the chocolate so that it resolidifies. I give the trays some time to harden a little - I didn't need to put them in the fridge. Then I fill them with truffle filling, peanut butter, maraschino cherries, whatever. Then I put them in the fridge.In the meantime I remelt the excess chocolate that I had cooled on the silicone mat. When the truffles have chilled and hardened, I cover the trays with the remelted chocolate. Then I scrape off the excess - a hair dryer is helpful here in case the chocolate cools too fast. Then the trays go back in the fridge to chill for a few hours.A couple of tips. Don't fill them too full, you need room for the bottoms. Keep a hair dryer handy for keeping the chocolate melted while you're working with it. Don't let the excess chocolate drip out for too long - your shells will get too thin. I did maybe 15 seconds. Shake the tray a little to help clear out the excess, but keep thetray flat while you do it - if it folds or twists you may fling chocolate all over your kitchen. Don't worry about cleaning the excess chocolate off the mold after you've let it drip out. Scrape it off at the end after the bottoms are done. Don't scrape it into the wells - your shells will end up too thick. Don't pop them out from underneath. They come out way easier with the tray upside down and you pushing them out from the top - I couldn't believe the difference this made.I looked all over but could not find out whether these are dishwasher safe. Based on their temperature rating it seemed like they would be okay so I tried it and they came out perfect.

Title: The best mould for truffle centers
Review: At our small chocolate factory, we've been rolling thousands of balls from ganache for years. Very tired of it, and I was looking for the altervative solution to ease up the hand rolling. Found this mould - the size is perfect, the ball is just the same as we make by hand.Ordered just 2 moulds to test at first. What can i say? I regret I have not found this solution before. NO MORE killing your wrists and elbows scooping the ceners. Make sure you use tempered ganache - this way it hardens within 1 hour and you may start dipping your perfect balls into chocolate. NO PROBLEM getting the ganache out of the mould - it pops out with just a little pressure. Now, ordered second batch and will defilitely order some more before Christmas.

Title: Great product!
Review: I make chocolates every year for Christmas using an old family recipe. Years past we would use toothpicks to dip the center of the chocolates into the chocolate pot. I saw these on Amazon and thought I'd try them this year. So I bought two different sizes and when we realized how much easier this would be, I promptly ordered more! It was very easy to use and to pop the chocolates out.

Review: These molds are well-made, but a little difficult to work with. They're large and unwieldy when removing truffles. Also - the holes to remove the truffles are very small and it leads to a good bit of breakage.I wouldn't recommend this mold for beginners.

Title: Worked well for dipping chocolates!
Review: I used this mold to make chocolate-covered caramels for the holidays. When it arrived, I was surprised by how round each mold looked. I thought the sides would be more straight. The roundness meant the top opening of the ball shape was fairly tight, which made it a little hard to put the chocolate and caramel in the hole, but it worked. Once the chocolate set, I had to push on the bottom of each sphere to get the chocolates to pop out, and the chocolates were then very round, almost perfect little balls. It was a little annoying that you couldn't just flip the mold upside down and have the chocolates all fall out at once, but when I pushed on the bottom of each circle, the chocolates did pop right out without damaging the round shape. And they looked really cute due to the spherical shape.
