Title: unique and accessible smoke-roasting
Review: This is a really fresh, interesting cookbook in a genre full of good ol' boys' competition brisket recipes and brotastic swaggering, even from the few female authors who wade into the fray. There's actually very few red meat recipes, no pappy's brisket or competition ribs, no slaw - the approach here is not low-slow barbecue but rather lightly smoking and smoke-roasting a wide range of foods - dried and canned beans, honey, chiles, olives, vegetables, and poultry and fish. Some recipes are fairly involved, but many are weeknight-feasible, and I really enjoy the Texas-Latin-Mediterranean vibe going with most of the recipes. Most importantly, though, this is a set of ideas and techniques for using smoke as a seasoning in just about any food or cuisine. Really stellar. And I like Disbrowe's fun, practical approach and voice. And a bonus? In one recipe, she recommends listening to Townes Van Zandt's "Pancho and Lefty." Worth the purchase price alone.

Title: Thorough and Creative
Review: I've been a griller / smoker for 50 years, and this book has expanded my repertoire greatly. Very creative. I now smoke beans, anchovies, butter, etc., as well as the usual stuff. Enough good ideas to keep me at the smoker until the snow begins ... and sometime after that.

Title: Great Concept; Tough with Gas Grill
Review: First off, Paula Disbrowe obviously poured a lot of effort into her book, and it shows. The recipes are thoughtful, well-presented, and most importantly, enticing to cook. There are a TON of new ideas in this book for getting smoke-infused flavor into your everyday live, from cocktails to desserts to salads. It goes WELL beyond the expected scope of "smoked meat."With that said, my biggest complaint is that I found it challenging to get that much-desired smoky effect simply using my gas grill. It could be that I didn't read the preface carefully enough (Paula prefers most anything to gas, but promises good results nonetheless), or that I'm simply too lazy (or thinking about dinner too late), but I never seemed to have the right combo of time/materials. I think if you had several aluminum pans, a bag of smoking chips, foil, and patience, you'd have excellent results. (And it's important to note: though I wasn't able to easily get smoky flavors into whatever I was cooking, the base recipe itself is STILL delicious, even without smoke!)If you can think ahead (or have more patience than me), I think this is the perfect book to accompany you this summer in the backyard. (Everyone will be impressed with your smoked cocktails!) Happy to have this book, and working on thinking about dinner before 7pm. Thanks for the free book, @tenspeedpress!

Title: new foods to smoke
Review: This book was so much fun! Who knew you could smoke grains? The directions were easy to follow and had great helpful hints on all topics of smoking. It has been a wonderful resource for this long time food smoker to had some spice instead of the same old things I've been smoking for years.

Review: I'm smoking again, but not with cigarettes. Now I'm using our grill and having fun exploring all the myriad ways suggested in this book. It's fun and I don't think my lungs are affected in the same way! Great advice and interesting recipes. Thanks for encouraging me to smoke!
