Review: I've been watching M. Pepin's most recent television series, had copied out several recipes and tried them, and all were successful; at some point I thought -- I should just buy the book -- and I'm glad I did!The frontispiece features nine nice pictures of the chef, from boyhood to a photo of him with his friend and sometime collaborator Julia Child. Chapters are:SoupsSaladsEggs and CheesePasta, Rice, Grains, and PotatoesBreads, Sandwiches, and PizzasShellfish and FishPoultry and GameMeatCharcuterie and OffalVegetables and Side DishesFruit DessertsPuddings, Sweet Souffles, and Crepes Cakes, Cookies, and CandiesTarts, Pies, and PastriesFrozen DessertsBasics (which includes subchapters on Seasonings; Stocks; Sauces, Butters, and Oils; Relishes and Pickles; and Drinks).Each chapter contains quite few recipes, which are geared toward accessible French country styles (recipes from the chef's family and techniques he's learned at various restaurants), but also Italian and Mexican recipes too. It's a very well-rounded collection. Each recipe is introduced in a paragraph that might discuss ingredients or accompaniments, call attention to a technique, or relate the history of the dish. Occasionally there are factoid boxes.The cover states that these are more than 700 of the chef's all-time favorites and so it is a compilation, with recipes pulled from many of his other books; so, if you already have every other Pepin cookbook (and there are many) you might not want this, but even then you might appreciate the organization and comprehension of this volume. The Meat chapter, for instance, has 24 beef (including carpaccio, marinated flank steak and pot-au-feu), 13 veal, 16 lamb, and 18 pork recipes. I've already tried nearly a dozen of the recipes and all have worked well and tasted good.Now one big reason I began by copying recipes from M. Pepin's tv show is that he is an AMAZING teacher -- very clear about how and why to do various techniques, so that watching the show is such a pleasure, and better than reading a recipe. BUT, what is wonderful is that there's a DVD included, which contains over 60 mini-lessons, the author showing and explaining many basic techniques -- everything from tying an apron to seeding a pomegranate. Each runs from 30 seconds to several minutes. These are fantastic.Unfortunately there are no pictures in the book, but perhaps that's what keeps the price so reasonable for all this information from one of the best chefs and teachers around. Paper is sturdy, the font is readable, and the cover is cushy and pleasant to hold. The index is comprehensive and helpful.Highly recommended.

Title: Beautiful Cookbook
Review: Wide range of recipes, some exotic [for me], but all seem clearly explained. Typical of Chef Pepin, the approach is straightforward, simple, and techniques explained. This cookbook is good for cooks with all levels of experience. I appreciate the very many hand drawings throughout the book.

Title: Not disappointed!
Review: I bought this because Pépin has a major reputation. Anthony Bourdainâs Les Halles Cookbook (the only other French cookbook I own) refers to Pépin as âBig Daddyâ. Needless to say I was excited to receive this book.. but also a little intimidated.It arrived about 2 hours ago, and Iâve been reading/browsing ever since. Iâm relieved and excited to say, this book is not intimidating at all. Compared to Bourdainâs recipes in Les Halles, Essential Pépin is VERY home cook friendly and accessible. Granted I have not cooked from it yet, but they all seem much more basic and homey than Bourdainâs restaurant-inspired dishes.I havenât come across a recipe yet that sounds too daunting. Very approachable, not snobbish at all (as French food can sometimes be). Also not all dishes are French! They call for ingredients/equipment you likely have or can get easily, and recipe instructions that clearly lay out each step and the timing.And this is all without even using the DVD yet. There are a lot of recipes in this book that I would never even have thought to consider. I have a feeling this will open doors to many new dishes for me and my family for many years to come.My one complaint - no photos 🙁 but the book is already massive so I understand it wouldâve been impossible to include them. Also Iâm fully capable of googling dishes to see if they look appealing, so this is not a major issue.

Title: Easy and flavor rich food with the expert instruction of Pepin.
Review: This cookbook has been a wonderful resource and teaching tool for me. I really enjoy cooking - I love to read about it, shop for new ingredients, and of course put together wonderful meals (of which my boyfriend is the eager test taster). I happened to catch an episode of the PBS show that ties in with this book and was so impressed by Jacques' modest yet skillful abilities that I bought the cookbook straight after it was advertised. Now I will say that I scored a great deal on the book by purchasing used, but nonetheless I have found it to be a great source for recipes based in French technique.I have tried 15-20 recipes out of this book and have been delighted with them all! His explanation of technique is wonderful. He will explain perfectly how to get the ultimate result without making me feel like a total beginner. Some of my favorite recipes include:Farmer's Style Soup (Simple but really satisfying!)Roast Chicken (In a cast iron skillet - the best method I have tried)Ratatouille (Healthy and easy to put together)In addition, the DVD has been great. I could watch Jacques truss a chicken any day of the week - he has this effortless ease with all the technique demonstrated.Overall - I think that this cookbook is fantastic for those who enjoy food and the cooking process. This is not a 30 minute meals, crockpot kind of cookbook, but the recipes use real ingredients and have shown me delicious results that are enjoyable to cook. Thanks Jacques! Love ya!

Review: This book is a regular compendium of Jacques Pepin recipes. It is an awesome book. I like the lack of fussiness about his recipes which are always very tasty. A few photographs would have been nice but after years and years of cooking I don't feel that they are essential. I was very impressed with the condition of the book (used) and the speediness of the delivery. All in all, a very good buy.
