Virginia Peanut Brittle with sorghum

Makes about 1 pound of brittle

My grandmother Noyes’s 'Welcome to North Carolina' gesture during my summer visits there was to let me help her make peanut brittle on the stovetop. My first job as a youngster was to simply stir, though she ultimately taught me and trusted me with every step of the process.

Whenever we need peanuts for a recipe, we grab a tin of Belmont Peanuts off our own retail shelves. Grown and roasted by Patsy Marks and her family on their farm in Capon, Virginia, just above the North Carolina border, they have a bold buttery flavor and an underlying savory sensibility. The Virginia variety is the largest type of peanut, so they add a satisfying crunch to complement the brittle’s crackle.

Recipe

Line a 9 x 12-inch baking sheet with foil and lightly coat the foil with nonstick spray. Coat a metal offset spatula with nonstick spray.

In a large saucepan fitted with a candy thermometer (if you have one), melt the butter over low heat.

Increase the heat to medium and add the sugar, sorghum syrup, corn syrup, and baking soda. Cook, stirring continuously with a wooden spoon, until deep golden brown, at least 10 minutes. Continue cooking until the mixture reaches 300°F on the candy thermometer, then remove the pan from the heat. (Alternatively, use a spoon to scoop up a bit of the mixture and dip it in a cup of cold water

When it hardens, remove the pan from the heat.)

Quickly add the peanuts to the hot mixture and stir with a wooden spoon until combined. Pour the mixture into the prepared pan, quickly spreading it into an even layer with the prepared offset spatula. Let cool for 30 minutes, then break the brittle into large pieces. Store in an airtight container at room temperature for up to 2 weeks.

Nonstick cooking spray 2 tablespoons unsalted butter 1 cup sugar ½ cup sorghum syrup ½ cup sorghum syrup 1 teaspoon baking soda 2 cups roasted salted peanuts

Title: Gorgeous book, delicious recipes
Review: I'm so happy I ordered this book. First - it's gorgeous. I love the feel of the cover, the look of the book itself, and the photography of the bakes. So far, I've made the Shenandoah Apple Cake and it was an easy to follow recipe, with detailed instructions that don't bog you down, and it tasted amazing (seriously, I ended up having to hide it from my husband). Someone said they didn't like the author's name dropping, but it doesn't bother me. In fact, I only heard of this book because Tim Kaine shared it on his instagram, so maybe the name dropping paid off. Also, someone else complained that the ingredients are too difficult to find or exotic - I have two thoughts about this. One is that I don't think any of the ingredients are so exotic that you couldn't find them. Two, I don't buy specialty cookbooks because they include recipes I could have thought of myself. I want it to have unique ingredients and combinations that make the recipes special. For example, one recipe calls for Paw Paws. You might not be able to find them in grocery stores, but Paw Paws are a native Virginian fruit that are easy to find at farmer's markets when they're in season. So maybe this is too difficult for some people, but I bought a cookbook from a rural Virginian bakery - why should he exclude recipes that reflect the local culture?Anyways. I loved this book, and am happy to have it sitting on the shelf among my other favorite cookbooks.

Title: Delightful cookbook, but go visit their storefront!
Review: I visited The Red Truck Bakery in Marshall, VA for the first time a month ago. It was a delightful place and the food they serve is really wonderful. I had a tuna sandwich for lunch and tried their Shenandoah Valley Apple Cake for dessert. I noticed that they had cakes in various flavors that were made with 'hooch'. I mean, who can resist that?? So when I somewhat by accident realized that they had a cookbook coming out this month, I jumped at the chance to 're-visit'the Red Truck. It is filled with beautiful pictures, fantastic recipes and snippets of interesting stories. If you can't visit the actual storefront, this book is the next best thing. I can't wait to try some of these recipes.

Title: Great recipes shared!
Review: This is an excellent cookbook. I ordered one for myself and then several more for gifts. There are so many wonderful recipes, with easy to find ingredients, simple well explained steps and photos that will make your mouth water. In addition there is fun background info and notes about the Bakery’s interesting history. I have been to both of their sites numerous times and am delighted that they have shared many of their recipes. After trying three of them I can’t wait to make more. Enjoy!

Title: I love cookbooks!
Review: I am so excited to have this cookbook! Firstoff, I love cookbooks in general and was very excited when I saw this was coming out. The book is full of beautiful pictures of the bake goods he sells in the bakery and of beautiful Fauquier County. I am so excited that he shared the recipes of some of my favorite items to get in the store. I take my kids in there often for their special treats. Thank you so much for sharing these recipes with us! The Cherry Almond Bars and Quiche are AMAZING!

Title: Tuna & Pumpkin Bread...
Review: Just got this book and read through it this weekend. I just tried my first recipe which is the pumpkin bread and it is so delicious! This is a nice read with great pictures as well. Hooked at the first sentence about John Wayne making him a tuna sandwich...I mean...that's just awesome!

Title: Book is okay but not as exciting as hyped
Review: I liked the variety of recipes but was incredibly disappointed that things like instant pudding were ingredients. I just don't put processed crap like that in my baked goods - so while I got some of the recipes I wanted, it was very disappointed in the ingredients - and it was not just one item that had instant pudding - it popped up in several -- so those recipes are basically useless. I would have saved my money if I had realized that.

Review: Ein sehr gutes Buch mit interessanten Rezepten. Leider ist es mit Beschädigung bzw. Abwetzungen am Einband angekommen. Daher vermute ich dass es eine Rücksendung oder ein gebrauchtes Buch ist.

Review: I gave this book to my sister at Christmas. I looked at the book before I gave it and was impressed with the stories and the recipes. I am waiting for my sister to photo copy some of the recipes so that I can try them. The presentation of the recipes was excellent and he often indicated the recipes that his customers liked best.

Review: I had already bought a copy of Red Truck Bakery Farmhouse Cookbook so had to buy this one. It has so many recipes covering breakfast, brunch, lunch and dinner if you want to cook that way. I have made only a couple of things so far but they have all been easy to make and so tasty. There are cakes, breads, pies - both savoury and sweet, slices, snacks....I could go on. A really good book for any level of cooking I feel. Not too hard but satisfying if you can cook. Caters for everybody.
