Creamy Tomato Basil Soup
SERVES 8 | PREP TIME 10 MINUTES | COOK TIME 30 MINUTES
Whole ingredients
FREEZER FRIENDLY, QUICK PREP 2 tablespoons olive oil
1 large Vidalia onion, chopped
3 garlic cloves, minced
2 tablespoons all-purpose flour
3 cups Chicken Broth
1 (28-ounce) can whole peeled tomatoes, with juices
1 teaspoon sugar
1/4 cup chopped fresh basil
1 cup whole milk
Salt, Black pepper, Shredded Parmesan cheese
Simple, easy instructions
1. In a large pot, heat the olive oil over medium-high heat. Add the onion and sauté until translucent, 5 to 7 minutes. Then add the garlic and cook until fragrant, 1 to 2 minutes. 2. Add the flour and stir to coat the onion and garlic. 3. Add the broth and tomatoes with their juices. Bring to a simmer, while stirring to make sure all the ingredients are incorporated and the flour is not sticking to the bottom of the pan. Reduce the heat to low, cover, and simmer for 30 minutes. 4. Turn off the heat. Stir in the sugar, basil, and milk to combine. 5. Using an immersion blender, blend the soup until creamy. Alternatively, in small batches using a high-speed blender, blend the soup until smooth. 6. Season with salt and pepper to taste. Top with Parmesan cheese, if using.

Review: While it's so easy these days to find recipes online, I still like a good 'ol fashioned cookbook to scan through. I wanted recipes for hearty soups that I could quickly heat and eat for lunch when I'm short on time and this book does NOT disappoint!I like to food prep on Sundays and decided on the White Bean and Rosemary soup and the Shrimp Gumbo. Usually we find ourselves tweaking seasonings in recipes, but the recipes here are really spot on! The soup was amazing! I would advise not removing the rosemary 'leaves' from the stem. This way you can adjust the flavor by removing them if the soup begins to get too perfumey. We froze one container and kept another for lunches. As for the Gumbo, I found frozen Kale right next to the frozen Okra! #winning! Anything to make cooking easier! I also added two beef andouille sausages which added a nice smokey flavor and bulked it up. For those like myself, who like to keep simple carbs to a minimum, this delicious Gumbo is equally as tasty on cauliflower rice as it is Jasmine rice ð.Today I'm making the Stracciatella Chicken Soup. Can't wait! Would have made it yesterday but chicken didn't thaw in time! Grrrr.....All in all, I found that the recipes were easy to follow and the prep was a breeze. I love slicing, dicing, chopping, etc. A couple helpful tips, for those who cry like babies when slicing onions, keep a pair of goggles in the kitchen because a lot of these recipes call for them and you don't want to cry through it all! Also, when possible, buy your veggies frozen. Not only will it save you on prep time, but if you can't get to making your soup right away, your veggies won't go bad in the fridge! *Be sure to defrost them before adding so you can remove the water content.Buon Appetito!

Review: I love this soup cookbook. Yes there are a lot of soup cookbooks but, for me, most are time consuming or too many ingredients. Most of the recipes here will take under one hour and are healthy recipes with common ingredients!

Review: My husband loves soups so this is perfect. GREAT variety of recipes. Uses lots of different spices and fresh ingredients but also some canned (canned diced tomatoes for example). Some are simpler than others but thatâs ok, I get to choose new and fun ones.Iâve made 4 different ones so far and they all turned out great .

Review: I am quite impressed with this book. I was looking for quick, healthy and freezable soup recipes and this book has plenty of those! Very good recipes-stuff I will actually make. There is something for everyone-from vegetarian to vegan and dairy free to gluten free. Yes, plenty of recipes for meat lovers too. I really like that recipes which are easily freezable are labelled as such. Clear instructions. Full of great health tips as well as tips to make life easier and substitution suggestions. Worthy of a spot in my cookbook library. An immersion blender will be your friend for soups that are meant to be smooth in texture.

Review: Fantastic recipes, lots of them old classics as well. I suspect that majority of the recipes is for making on the hob. But just need to tweak it and it can be made in a soup machine, or a pressure cooker so. I look forward to putting these recipes to use, and enjoying them, their easy to follow has great tips if your on a gluten free diet and what to do, this recipe book is well thought out. Great recipes I love them.
