Title: Mostly Roasting Meats
Review: I just received it and perused the pages and it looks very promising. I'm a fan of America's Test Kitchen and so expect it will be a great addition to my recipe book collection. I wish it focused more on veggies, but the ones included looked and sounded yummy. My book was shipped by Apple Pie Discounts and received a great price, fast service (shipped immediately) and the book was wrapped to protect the dust cover, packed to keep it from moving in the sturdy box and well sealed. The book arrived in superb condition that I could give it as a gift!

Title: Confidence building book
Review: Love this book. I book-marked the recipes I wanted to make. I had a side of salmon and broccoli in the fridge. I looked for the roast broccoli and side of salmon recipes. The preparation was simple and the food tasted wonderful. Who knew roast broccoli could taste so good! I must admit I didn’t use all the spices for the salmon recipe, I just roasted it with oil, salt, and pepper. However, ATK’s methodology for the salmon and broccoli has given me the confidence to try other spices and flavors.

Title: Beautiful book! Really is the definitive guide to roasting everything!
Review: This is a beautiful book! It’s a large volume, so I’m thrilled they went hard cover on this one.The first 33 pages cover the different cuts of meat, purchasing, and prepping. Then they talk about brining, temperature guides, sauces, and equipment.Then it gets into the recipes. The sections are: Ten Essential Roasts * Poultry * Beef * Pork and Lamb * Seafood * Grill Roasting * Vegetables and Fruits (There are 8 different roasted fruits with a bunch of variations and they look wonderful! I can't wait for peach season now!). Each recipe has one page for the recipe, and another for a big color photo. There are a handful of process photos sprinkled through the book where they want to illustrate a technique more clearly. There’s a “Why This Recipe Works” before each. Some have fun variations listed.There’s definitely overlap with the big ATK book and CC books. I’m torn about that. This is a pretty definitive volume, and if they hadn’t included their tried-and-true classics, it really wouldn’t be. This is pretty well split between classic comfort roasts and exciting new roasts, and between casual and elegant.My thoughts and pics of the dishes I tried:1) Thai Roast Chicken with Chile Dipping Sauce. Outstanding. Incredibly flavorful with a mild chile heat. Super moist, and lovely skin. I usually make beer can chicken on the grill, so my oven chicken roaster was happy to get put in the game. The kids were looking for more. This one’s in their preview on their website, so you can give it a try.2-3) Classic Roast Beef with Gravy and Roasted Green Beans with Goat Cheese and Hazelnuts. Super yummy, and really relaxing to pull together. It really does come out perfectly. I will do the gravy a little earlier next time, so I can reduce it a bit more after straining it. The green beans were wonderful. There’s supposed to be goat cheese in that, but that’s the only no-go ingredient with my kids, so I skipped it.4) Honey-Lime Glazed Roast Salmon with Roasted Brussels Sprouts with Bacon and Pecans, and Cinnamon-Sugar Roasted Sweet Potato Wedges. Terrific dinner! The salmon has a little sweetness and a little spiciness, so I was torn between the cinnamon sugar sweet potatoes and the cumin chili sweet potatoes. I love all the variations listed.5-7) Bacon-Wrapped Pork Loin with Peach Sauce and Roasted Broccoli with Garlic. The broccoli was pretty normal, but the bacon wrapped pork loin and peach sauce were outstanding! I’m sure 8 recipes in is too soon to declare best in book, but best in book.8) Roasted Red Potatoes. The texture's perfect! They're lovely and crisp on the outside and fluffy inside.I’ll update this as I play in the book more….

Title: Really excellent how-to-do-it book for all cooks.
Review: Great book, enjoying it immensely and every recipe I have tried is great. I really like the ATK approach of including the science of “why” and a picture of how every recipe turned out. The roast chicken recipe is absolutely wonderful. This is a helpful book for beginners, rushed Moms and experts who have been roasting and bbqing everything for ages. Smoked Brisket is next up on my list!

Title: Another ATK hit. A great value.
Review: As usual for ATK, this book is very complete with great deal of useful info as well as great recipes. I have several ATK books on various topics and highly recommend them all. They are a great value. Beginning cooks should get the ATK Cooking School book. It will make a good cook out of anyone even if they have never seen a kitchen! 😀

Title: Great photos but so poorly organized
Review: Great photos and great recipes, but so poorly organized that it is almost unusable.The “Table of Contents” has no page numbers associated with it! If you are looking for something, you have to use the index. There is NO WAY to simply page a category such as “Beef” as they are scattered throughout the book.As others have pointed out, the recipes themselves are nothing out of the ordinary.
